I found this recipe and I make it probably three times a month, my kids especially love the homemade noodles, and it is not hard to make. I love to eat and make a lot of soup when it is cold outside. I think it would be fun to share some really good recipes that we have found.
Noodles:
1 cup flour
1 Egg
1/2 tsp. salt
2 Tb of milk
1/4 tsp baking powder
1 Tbsp oil
(I usually make about three times this much because my kids love them)
Beat eggs slightly; add milk. Combine flour, salt and baking powder. Knead thouroghly until dough is stiff. Roll dough on counter top. Put flour on top of dough. Roll up jelly style. Cut into 1/4 inch noodles. Cover with towel and let stand for 1/2 hour. (like mom says it is easier to cut them up when they are dry and not too wet. When I triple the batch I usually cut the dough into three and roll them out seperately, just a little easier than having a huge big thing of dough!)
Chicken Soup:
Chicken
Chicken Broth
Onions
Celery
Carrots
I usually buy the cheap chicken for my soups (ie: chicken drumsticks or thighs) Cook the chicken in the broth. Cut up everything onions, carrots and celery. Add veggies and noodles to chicken and broth. Cook until noodles are done. ( The center will be look like the outside, if they are not done, the center looks like there is still flour in the middle)
We love this and I think you will too.
If you don't have time to do the noodle, use egg noodles and it is still really easy to do when you don't have a lot of time.
